Macaroni Cheese

This very popular and very easy dish that goes brilliantly with anything.

A quick and easy family supper that’s as popular as ever! If you want to jazz it up a bit just add some cooked bacon, sausage balls, tomatoes, peppers, mushrooms – really just use what you have going spare in the fridge.

(Serves 4)

250g macaroni
50 butter
50g plain flour
650 ml milk
250g cheddar, grated
50g parmesan
25g blue cheese, Stilton is good
25g breadcrumbs
Salt and pepper

  1. Salt some water in a saucepan and bring to the boil, cook the macaroni for 8 minutes – it should still be quite hard. Drain and put aside.
  2. Meanwhile make the sauce. Melt the butter over a medium-high heat, add the flour and mix to make a paste. Cook over a low heat for 3 minutes (this cooks out the flour), stirring. Gradually add the milk, little by little, stirring all the time until you have a smooth and thick sauce.
  3. Add the cheddar, half the parmesan and the blue cheese, mix until it’s all melted and smooth, season. Pre heat the oven to 180c.
  4. Mix into the cooked macaroni until everything is evenly coated. Pour into a buttered baking dish, sprinkle over the remaining parmesan and the breadcrumbs.
  5. Place in the oven and cook for 20-25 mins until the top is golden, crispy and browned. Serve immediately with a crisp green salad.
